Pineapple, Wheatgerm & Sunflower Muffins
250g pineapple pieces & juice plus ½ cup of well drained crushed pineapple
Save 12 pieces to put on top of each muffin
½ cup wheatgerm
½ cup sunflower seeds
1 egg beaten
2 heaped tsps baking powder
1 cup vanilla so good soy milk
1 cup white flour
½ cup soy flour
2 tbsp honey
½ cup (50g) butter
1 ½ tsp mixed spice
In a bowl combine together pineapple, wheatgerm, sunflower seeds, egg & milk and set aside. Melt butter and honey in microwave 20 seconds. Let cool. In a large lowl sift flours, baking powder & spice. Add wet mix and gently combine all ingredients until mixed together. (Do not overmix)
Spoon into greased muffin tins. Fill to slightly above level.
Bake 180° 25-30 minutes in gas oven not turbo fan. Check at 25 minutes.
Makes 6 large muffins.
