Apple & Pecan Snack Cake

Heat oven to 180 C
- 1 cup sugar
- 1 cup vegetable oil
- 1-cup walnuts or pecans (roughly chopped)
- 1-cup carrots grated
- 1-cup apple grated
- 2 cups flour
- 440g tin unsweetened crushed pineapple (drained)
- 2 cups flour
- 2 tsp. baking powder
- 11/2 tsp baking soda
- 2 tsp cinnamon
- ½ tsp mixed spice
- 3 eggs (4 small)
- ½ cup protein powder.
Using a wooden spoon beat together eggs, sugar, and oil until sugar has dissolved.
Combine sifted flour, baking powder and soda with spices. Mix apple, carrots and pineapple and nuts together and mix with dry ingredients. Makes 12.
¾ Fill tins.
Place in oven at 180 C for 35mins.
Cream Cheese Icing
- 250g lite cream cheese
- 1 cup icing sugar
- 1 tsp grated lemon rind
- Mix together with a fork.
