Yoghurt and Fruit Parfait



To make 2 glasses
2 cups (750g) low-fat plain yoghurt
4 tbsp. whey protein powder
¼ cup easiyo passion fruit pulp
1 x 50 x 50 mm block sponge cake
fresh or tinned fruit
slivered almonds, toasted to decorate

Place the yoghurt, passionfruit pulp and protein powder in a bowl, and mix well, set aside
Cut 1 pieces of sponge to fit each glass 
Put well drained fruit in the bottom of each plastic cup.
(From the bottom of the cup it should be about 30 cm up the side of the container).
Add the sponge then the yoghurt then decorate the top with the almonds or could add a sprinkle of coconut
Then seal the remainder of the yoghurt and put in the fridge will keep for 4 days.
